Let’s face it—cooking can be a joy… until 6:15 p.m., everyone’s hungry, and you’re staring blankly into the fridge hoping dinner will assemble itself.

That’s where kitchen hacks come in. It is not the complicated kind that requires fancy gadgets or chef-level skills, but real, simple tricks that save time, reduce cleanup, and help you move through meal prep like the capable home cook you are.

Here are 12 kitchen hacks I’ve learned (some the hard way) that make everyday cooking faster, more brilliant, and less frustrating. Your future self, especially the hungry version, will thank you.

Use a Trash Bowl While You Prep

Instead of running to the trash can every time you peel something, grab a bowl and set it on the counter. Toss peels, wrappers, stems—whatever you’d normally walk away to throw out—right in the bowl.

At the end of prep, dump it all at once. It saves steps, keeps your counters cleaner, and prevents you from doing the “drip walk” across the kitchen with onion skins dangling off your fingers.

Freeze Leftover Broth, Sauce, or Wine in Ice Cube Trays

Don’t toss that half-used broth or splash of wine from cooking—freeze it! Pour the broth into ice cube trays and store the cubes in a zip-top bag. Next time you make a quick sauce, soup, or stir-fry, you have instant flavor cubes ready.

It’s also great for freezing leftover tomato paste, pesto, or fresh-squeezed lemon juice: small cubes, big flavor.

Put a Damp Towel Under Your Cutting Board

If your cutting board does the cha-cha slide every time you slice a tomato, here’s a quick fix: place a damp paper towel or kitchen towel underneath it. It’ll stay put, and you’ll avoid chasing your carrots across the counter.

Chop Once, Cook Twice (or Thrice)

Are you making tacos tonight and stir-frying tomorrow? While you’ve got the cutting board out, chop extra onions, peppers, or other veggies you’ll use later in the week. Store them in airtight containers in the fridge.

Pre-chopped ingredients make future meals much easier, and you’ll thank yourself when tomorrow’s dinner feels halfway done before you start.

Line Baking Sheets with Parchment Paper

If you haven’t jumped on the parchment paper train, now’s the time. It prevents sticking, makes cleanup a breeze, and saves your pans from baked-on gunk.

Store Spices in a Drawer, Not a Cabinet

Spices stay fresher longer when they’re away from heat and light. Plus, storing them flat in a drawer with the labels facing up makes it 10x easier to find what you need. No more knocking over the cinnamon to find the cumin.

Boil Water Faster with the Lid On

Trying to boil pasta? Put a lid on it—literally. Trapping the heat speeds up the process and gets dinner going faster. Just don’t forget to remove the lid once it starts boiling—no one likes a foamy stovetop surprise.

Use a Pizza Cutter for More Than Pizza

That handy wheel is excellent for slicing quesadillas, sandwiches, waffles, herbs, or even pancakes for the kids. It’s quick, easy to clean, and more fun than a knife.

Clean as You Go (Seriously)

You’ve heard it before, but it bears repeating: clean as you go. While something simmers, load the dishwasher. While water boils, wipe down the counter.

It prevents that “mountain of dishes after a simple meal” feeling that makes you want to order takeout tomorrow instead.

Preheat Your Pan Before Adding Food

Want a golden sear on meat or crispy edges on veggies? Let the pan heat for a minute or two before adding anything. A hot pan reduces sticking, cooks more evenly, and makes you feel like a total kitchen boss.

Store Salad Greens with a Paper Towel

Place a dry paper towel inside your container or bag of greens to absorb excess moisture. This keeps them fresher and longer and prevents you from discovering a slimy mess when making a quick salad.

Use a Lazy Susan in the Fridge or Pantry

Are you tired of knocking over jars or forgetting what’s in the back corner of the fridge? Use a lazy Susan to corral condiments or small pantry items. A quick spin, and boom—no more mystery mustards.
